No-Bake Christmas Cake

This is probably one of my best loved sweet treats at Christmas time, loaded with nuts and all sorts of interesting goodies like cherries and glazed ginger. Do not feel bound by the ingredients: if there are some you don't like, substitute with the correct amount of what you do like. Just about any glazed or dried fruit of your choice will do. Use sherry if you prefer or use orange or berry juice if you are a teetotaller. When you make this homemade no-bake Christmas cake you're guaranteed to fall in love with the richest of cakes while showing Eskom and your guests who's the Christmas Cake Boss! 6 Simple Ingredients
3 cups of fruit cake mix
250 grams of butter
100 grams of sugar (optional)
2 large organic eggs
2 tablespoons of brandy (or tipple of your choice)
2 packets of Tennis Biscuits (This year, I've used the new cocoa and mint flavoured ones)
Easy peasy to make

Place the fruit cake mix, the sugar, and the butter into a large pan and slowly bring to the boil for 15 minutes.

Remove the pan from the heat and set aside.

Meantime, whisk the eggs and the brandy together in a small mixing bowl. (A vintage Tupperware Quickshake also works well.)

When adding the whisked eggs and brandy to the cake mixture, pour very slowly while stirring briskly with a whisk, otherwise you are going to end up with scrambled eggs a la Christmas! Consider yourself forewarned!

Crush the Tennis Biscuits (not too fine) and stir into the mixture.

Mould firmly into a greased baking tin, or a pyrex dish of your choice, or a Jel-Ring.

Once cool, place overnight in the refrigerator (hide it on the very top shelf to avoid midnight raiders!)

Cut into slices or squares or whatever shape you fancy.
Legend has it that once upon a time someone forgot to add flour and baking powder to a traditional Christmas cake recipe and a certain baker ended up with a flat but rather tasty sweet treat! Ever the activator, she created a "no-bake Christmas cake". Go on, make this cake, take a bite, close your eyes and think magnificent skies, tall fir trees, and the star that led the wise men to their Messiah in Bethlehem.
